GREEK YOGURT LEMON POPPYSEED MUFFINS These are our house muffins. That is, I make these all the time for my family no matter the time of year. This recipe is wonderfully flexible, you can swap out orange juice for lemon if you’d like, and you can add a glaze if you want them a little sweeter. These are great for the lunchbox, family brunches, taking to friends, or even stocking in your freezer. Makes 1 dozen ¼ cup unsalted butter (1/2 stick of butter), at room temperature ¾ cup granulated sugar 1 cup full-fat Greek Yogurt ¾ cup Buttermilk ½ teaspoon salt 1 teaspoon vanilla extract 1 tablespoon lemon juice 1 large egg 2 teaspoons baking soda 2 cups all-purpose flour 1 TBSP poppyseeds Preheat the oven to 350 degrees F. Prepare a 12-cup muffin tin and set aside. In a large mixing bowl, beat the butter and sugar until light and fluffy, about 2 minutes. Then, add the egg and mix well. With the mixer on low add the yogurt and buttermilk until just combined. Next add salt, vanilla, and lemon juice and mix until just combined. In a small mixing bowl add the baking soda to the flour and whisk it together, then slowly add the flour mixture to the batter and mix until the batter forms and the flour is no longer visible. Once the batter is formed, fold in the poppyseeds. Fill each muffin cup almost totally full so all the batter is used up. Bake the muffins at 350 degrees for 25 minutes, or until they have risen and are golden brown on top, and a cake tester inserted into the center comes out clean.

INGREDIENTS : For the streusel ½ cup all-purpose flour ½ cup white granulated sugar 1 teaspoon cinnamon ¼ cup cold butter, cut into very small chunks Wet Ingredients for the muffin batter ⅓ cup unsalted butter, melted (can use coconut oil) 2 x-large eggs ½ cup buttermilk or any nut milk ½ cup zero fat Greek yogurt zest from 1 lemon Dry ingredients for the muffin batter ½ cup white granulated sugar 2¼ cups all-purpose white flour 1 teaspoon baking powder ½ teaspoon baking soda ¼ teaspoon sea salt 2 cups fresh blueberries tossed in 1 tablespoon flour INSTRUCTIONS : • Make the streusel by placing all ingredients into a small bowl and incorporating them with your fingertips until small crumbs form. Place the bowl into the fridge until ready to top your muffin batter. • Line a 12 cup muffin tin with paper liners and preheat oven to 425F. (Not kidding, see my tips for a perfect dome in the blogpost). • Whisk together all the wet ingredients. • Fold the wet ingredients into the dry ingredients and mix just until combined. A few lumps are fine, just don't over mix or you will end up with tough muffins. • Now gently fold in the blueberries using a few strokes so you don't over mix again. • Using a cookie/ice cream scoop, Divide the batter evenly between the muffin cups. Sprinkle the muffin batter with the chilled streusel topping and reduce the oven temperature to 400F. Place tin on lined baking sheet to catch any batter that drips over and bake for 10 minutes. Reduce oven temperature to 350F and continue baking for another 15 minutes or until toothpick is inserted and comes out clean. Remove tin from oven and let COOL FOR AT LEAST 10 minutes in the tin. Remove then let cool completely on a baking rack.

Ingredients 1 cup whole wheat flour 1 tablespoon cornstarch 1/2 tablespoon baking powder 1/4 teaspoon salt 1 and 1/2 tablespoons Sesame Seeds 2 large eggs separated (1 egg, 1 egg yolk) 1/2 cup Greek yogurt 1/4 cup coconut oil measured when melted 1 heaping tablespoon lemon zest 2 teaspoons lemon extract 1/2 cup brown sugar lightly packed Optional glaze 1/4 cup white sugar 1/4 cup lemon juice Instructions Preheat the oven to 350 degrees F. Spray and generously flour (do not use muffin liners as these stick) 8-9 of the muffin cavities and set aside. Pull out the wet ingredients to allow them to get to room temperature (eggs, yogurt, and melted coconut oil) In a bowl toss together the flour with the cornstarch, baking powder, salt, and sesame seed until mixed. (Tip: when you measure the flour spoon and level the measurement so you don't pack in too much flour into the measuring cup; you want this to be a loose measurement.) In another bowl (important to use 2 bowls so the ingredients don't get over-mixed resulting in dense muffins), lightly beat the room temperature* egg and egg yolk with a fork for 20 seconds. Stir in the room temperature Greek yogurt, room temperature coconut oil (measure when it is melted and then let the melted oil cool to room temperature), lemon zest, lemon extract, and brown sugar. Combine the wet and dry and mix until just combined. Fill up 8-9 of the muffin tins (muffins should be just over 3/4ths the way full). Place in the oven and bake for 18-22 minutes or until a toothpick comes out clean when inserted inside. Remove from the oven and allow to cool for a few minutes before removing from the muffin tin. Allow to cool an additional 10-15 minutes before adding the glaze. Optional glaze: Combine 1/4 cup white sugar plus 1/4 cup lemon juice in a small saucepan. Stir until the sugar is completely dissolved and a thick syrup forms. Let cool for a few minutes and then brush or spoon over the muffins.

Mix in mashed bananas beaten egg, oil, and yogurt. 6. Mix until well combined. 7. Pour banana mixture to wet ingredients and using spatula mix well 8. Please don't overmix. 9.Scoop batter into prepared muffin tin. 10. Bake in preheated oven for 18-20 minutes or until a toothpick comes out clean when inserted. 11. Let it cool on a wire rack. Ingredients donuts 3/4 cup quick oats 1/4 cup + 1 tbsp all-purpose flour 1/4 cup whole wheat flour 3 tablespoons ground flaxseed 1/2 cup greek yogurt 1/3 cup maple syrup 1/4 cup + 2 tbsp pumpkin puree 1/2 tsp baking soda 1/4 tsp salt 1/3 cup blueberries topping peanut butter mixed with maple syrup Directions Preheat oven to 375ºF. In a bowl, combine all ingredients except blueberries. Once batter is mixed together, fold blueberries in. Grease a donut pan and scoop some blueberry donut batter into each tin. Wet your hands and use them to press the batter into the donut tins (the dough will be sticky, which is why you wet your hands). Feel free to fill the donut molds fuller than the top of the mold. It'll be fine. Bake for 13 minutes. Serve with a latte.

This is how I make my Strawberry Muffins, with yogurt!!! You can actually make Blueberry Muffins out of this recipe too! Just substitute the strawberries with blueberries and you'll have yourself a tasty blueberry yogurt muffin. I actually prefer putting yogurt in muffins that has berries in it because it brings out the tanginess and it makes the muffin moist. I hope y'all give it a try :) Enjoy!
